This was my solution to thanksgiving leftovers (there's alot, when you have a pandemic thanksgiving alone...)

Ingredients: Wild rice, faro, chickpeas, squash, beets, hummus, lettuce, pomegranate.

Preparation: Cook grains, dice and roast beets, squash. Make a dressing of olive oil, cider vinegar, maple syrup, dijon and salt.

Plating: Fill bottom of with lettuce, portion other toppings evenly around in a circle, top with pomegranate dish.
